I’ve been craving stuffed shells for a long time, so I figured why not try them vegan? So I did, and they got YUMMY. My only complaint though, is I should have blanched the spinach and basil before mixing it into the tofu ricotta. Oh well, it still tasted good. =D

Heres there jist for the “ricotta”:
1 package tofu (most tofu ricottas call for firm, but I used silken, since I wanted it creamy.)

Salt &Pepper
1/4c olive oil
1 teaspoon lemon juice

Chop the basil and spinach (cook or blanch it if you want.) Mix that all together in a bowl. I used and old fashioned potato masher. Set aside.

Pasta & Sauce & Bread:
1 Box of your favorite jumbo shells
1 Jar of your favorite pasta sauce. I used garden vegetable style because I like the zucchini chunks.
3 Rolls ( froze some almost stale hoagie rolls just for this occasion!! Almost stale bread gets nice and crispy in the oven!)

Cook pasta to near done. Drain and cool a bit. You should have your oven preheating to 350F.  I lined a Pyrex baking dish with tin foil because cleaning cooked on tomato sauce sucks! Open the pasta sauce and put a little in the bottom of the pan to keep the shells from sticking. You can also spray some non-stick spray on the foil if your into that kinda thing. Start filling the  shells with the r

icotta mixture and lay them in the pan face up. Dump the rest of the sauce on top and put it in the oven for 10 or 15 minutes.

Garlic bread is easy! Slice the rolls in half, slather with a bit of spread, dash of garlic and some parsely and shove those in the oven too! When they are nice and golden and crispy, they are done! Take the shells out before the bread or your pasta will get hard.

My basil and mint plants are HUMONGOUS! I’m going to have to pick and dry it all because there is no way I will be able to use it. However,  I will be making basil lemonade. Basil lemonade you say? Whats that? Only the most delicious lemonade you will ever taste! Don’t snub your nose, its really awesome!

Just whip up some lemonade and add some crushed fresh basil and let it soak. You can do this with strawberry lemonade too. It gives such a different flavor and the basil stays very light. I think it adds sweetness.



I’ve sort of been slacking on the cooking. We’ve eaten pizza. We’ve eaten fast food. We’ve eaten crap I wouldn’t feed my dog! I’ve been trying to drop some weight and have been exercising at the gym at college, however, eating horribly will do no good! Counter productive I say! So, back to cooking as vegan/vegetarian as I possibly can. Not to mention I love trying to see what I can make without animal products.  This dish has no name, and its sort of a concoction of my own. I found this AMAZING roasted potato recipe for oven potatoes, but, I didn’t have any time to do such a thing in the oven, so I threw some canned potatoes in a pan with the seasoning of the oven potatoes, added some mushrooms and veggies and sauteed them in olive oil.

So here’s the jist:

1 can of potatoes
1 small can of shittake mushrooms (watch the brand! These had MSG in it, yuck.)
3 pieces of bok choy
1/2 cup of peas
About 3 tablespoons of olive oil
1 teaspoon of each – oregano, basil, paprika
A dash of salt and pepper

Heat the oil and add potatoes (be careful, the oil might spatter since these were stored in water) let them cook a bit since you want the potaotes crispier than the other items. Add the bok choy, I did mine whole because I like the way it looks, ha ha. Then the mushrooms. Add the seasoning, and flip the bok choy after a little while.  Keep stiring the veggies so the potatoes get nice and golden on all sides.

You could probably add some tofu or tempeh to this to add some protein, possibly some nuts? I’d think this would be yummy with sunflower seeds!

So, like always, I love experimenting with new foods. I’m really into vegetarian/vegan foods right now because I find them really, really intriguing. Don’t get me wrong, I don’t agree with how farm animals are treated, but its really the substitutions that really get me. I was looking at a brownie recipe (that looked really, really delicious!) that did not use any granulated sugar at all. Instead, they used brown rice syrup. I did not know that rice can make syrup! I mean, if you look at it biologically, any plant can make sugar, seeing as they create their own glucose… but… really, I find that so fascinating.

Another thing I find quite interesting is vegan Jell-0. Of course vegans do not use gelatin because its an animal product, so what is substituted is Ager-ager. Auger is derived from seaweed. I used this stuff on a almost daily basis in my microbiology class to culture and grow bacteria! Who knew you could actually eat it. I think I might share that with my professor on Tuesday.

So, asked the boy what he’d like for dinner. I got the usual “I dunno” answer. Off to the grocery store we went. I had earlier saw a vegetarian rice and bean recipe on the internet that I was interested in making. I’m starting with simple recipes because I don’t want to screw something up, have it taste, horrible, and then have the boy be turned off to vegetarian dishes. I am on a never ending quest to get him to eat more veggies and healthier.

So this is what I cooked up:

Brown rice
Carrot (shredded)
Black beans
Firm tofu (cubed, which will turn into smaller pieces from the stir-frying)
Diced tomato and juice
2 garlic cloves
Black pepper
Fresh oregano
Fresh basil
Sazon (Spanish seasoning, orange color)
Chili powder

It was very, very tasty, and I will make it again. If you do not like chili powder, you can always omit that ingredient. I know some people do not like peppers. The boy had two servings and didn’t pick out the beans or carrots! This meal was defiantly full of win. Mission complete.

I’ve been copying notes since 1 pm with a few short breaking in between. It is now 2:17 am. My fingernail has a permanent resting spot on the inside of my other finger. I’m pretty sure I should stop writing now, before my fingers fall off. But, this is what I have to do in order to study my class materials. I don’t know any other studying techniques and I can’t find any type of information online, so I do what works, and unfortunately what works is long and tedious. I’d love to have another method for memorization and learning, but, oh well. I guess this is what works for me, at the price of possible carpal tunnel during my college career.

I was perusing my online class’s discussion board which we are required to post on at least 16 times during the semester. I’m pretty sure I’m over 16 posts already seeing as the people who inhabit the board are idiots! Today there was a battle of the brains about how vaccines are horrible and only make people sick. I posted something along the lines of “If that’s what you think, go get the real disease and then talk to me about sick, jackass. Why do you think the measles are coming back to the States? Because we stopped vaccinating for it because we thought we “immune” to it, that we had defeated its existence. WRONG. People and children are dying from it because its not “required” anymore. All vaccines are good vaccines. Period, no matter if you get a little ill from them.” That was just the general jist of it, of course I was more polite and thorough with my post as to not be accused of being demeaning by the instructor.

Also, something else that really got me revved up was one of those people who thinks being a vegetarian makes them better than us omnivores. Don’t get me wrong, I respect people who are veggies for the correct reasons, but I don’t respect the people who participate solely because they think its cool and trendy and don’t really know much about it. So anyway, we were on the E.coli outbreak topic, and this person had the audacity to say “Not to be preachy, but I’m sure glad I went vegetarian 4 years ago.” Dear, Asshole. Did you forget what happened 4 years ago? Do ya? Huh? There was GOD DAMNED E.COLI OUTBREAK in the spinach crops! No one is safe! E.coli can happen to most any food. NOT just meats and animal products, jackass.” Once again, that’s the general jist. I was more polite and thorough with my explanation. So maybe I was a little too irritated by all that, but oh well, I cant take the stupidity, that’s all!

In other news, a large photo frame fell off the wall today and landed on my ankle. Fantastic. Just what my brain dead ankles need, more concussions. I wonder if they make safety helmets for ankles… probably not.

In other-other news, the dogs are wondering why the hell I’m still awake.


So… I’ve been hearing rather horrible things about the science department at Kutztown.

“I know someone who said they came out of there knowing more from LCCC.”
“KU is only good for art and education.”
“Forget KU, go to Del Val.”

So, I suppose I’m forgetting about KU and going to Delaware valley. Delaware valley is a REALLY nice school, and its known for its fantastic science department. I guess it’s rather hard for a science school to have a bad science department.
It seems like I’m really indecisive about what/where I want to go with my life, but I’ve really got a method to my madness. I just want the best possible outcome I can get, and if my interest changes along the way that’s fine with me. Isn’t that called something like “personal growth?” No one should get irritated with me along the way since its my journey and I’ll go where ever the winding road takes me.

On a plus side, Delaware valley awards money based on the GPA you transfer to their institution with. A hefty sum at that, anywhere from $5,000-10,000 on a GPA scale from 2.5-4.0. Thats a really nice chunk of free money, seeing as the semesters tuition is only around $13,000.

In other news, last night I wrote a frantic E-mail to my nutrition instructor. I had taken a quiz which I had felt very confident about. The results said I got a 0%. So, I quickly typed up a letter explaining what happened and if there was some sort of mistake. She probably thought I was insane since she said I had gotten 12/15 correct. I sent her a screen shot of it, just to prove my sanity. Ha, ha.

Also, while we are talking about college, there was an incident with switching professors the other day. So, I have the pleasure of having an retired high school teacher as a college professor. My last years lab professor and I talk on a regular basis since he is the instructor for the lab prior to my microbiology lab and is in the room until my micro professor shows up. I had told my last years lab instructor that he teaches like a high school teacher. The instructor responded “well…that’s because he was.” I responded with a solemn “Oh..” Now, usually, people would be happy to have an easy instructor, but this man drags out every single explanation… forever! “Dear Jesus I already know how to use a microscope! We don’t need to talk about the parts and instructions for  an hour and a half! You don’t need to read the details of the lab assignment! If I have a question, I will ask! I can follow directions, Sir!” Arrrgh!! So, thats not even the story. That was some back information. I go down to the administration office and request to change professors. They said “Oh, well you cant do that anymore, the last day to change was on Friday.” (This day is Wednesday of the next week mind you, and Ive only had this class once so far.) I was dumb founded. These people are seriously not going to let me change a class time because there was a DEADLINE? I know colleges have rules and such… but… ITS MY GOD DAMNED MONEY I’M PAYING YOU, AND IF I WANT TO CHANGE A CLASS IN THE FIRST TWO WEEKS OF SCHOOL I THINK I SHOULD HAVE THE OPPORTUNITY!!! Well, I’m glad I got that explosion out. Anywho…

So, the boy has been sleeping since about 4:00 PM, and it is now 8:21. I’ve tried waking him on multiple occasions and he hasn’t budged, or he’s thrown a fit like a kid not wanting to go to school. It’s a never ending cycle. He goes to sleep for hours after work because hes so tired, then wakes up so late that he can’t fall asleep at the proper time to wake up at 5 am, it’s one big ball of annoyance. Whatever. Be tired.

Back on the topic of college. I have about a year left at LCCC, then I will be transferring. If I decided to go to DelVal we will have to move closer to Doylestown, but not to close, because I don’t want the boy to have to drive forever to get to work. I google mapped everything and it seems that Quakertown is the most convenient location for both of us. It is about a 30 minute drive for us both to go where we need to be. Thats a pretty descent drive time, and I know a few people who live in Quakertown and they haven’t said too many horrible things about the place, so I’m assuming its an okay place to reside. I like Quakertown because there is “country living,” which is exactly what I want. I want a cute little house with a nice size yard. Oh, and don’t forget the chickens!

I want farm animals so badly. I want to grow/farm a lot of my own foods. (that don’t require slaughtering fuzzies) I’d grow too attached to the animals, especially if I raised them myself, to eat the poor things. I do, however, want a really big garden with many veggies and fruits. Fruit bearing trees would be fantastic also…then I could go play in my garden when the boy decides to hibernate daily, instead of sitting on my lard ass typing nonsense.
What I really want is a place for the dogs to run… maybe someday. I hope.


The title says it all.
I should be doing biology homework, yeah, the homework I fell asleep on top of yesterday at about 3:00pm. That work is all I have to do this weekend and It seems the less work I have, the more I push it off, heh.

My classes have been going well. I said it once, i’ll say it again, I love college. I have the same biology professor for Microbiology that I had for Biology 105 last semester. Yanno, the skinny Jack Black looking guy. I think he’s one of my favorites. He makes the lectures interesting, and funny, he’s also a good lab instructor as well.

Psychology class is kinda, well, psychology. I’m not too fond of psychology, but it comes easy to me, so I take the courses and get good grades. They are also a requirement for my B.S. anyway, so why the hell not. The instructor is about 25/26 years old and shes okay. She is/was however, rather ignorant to the bully breed. I put her in her place the first day of class…. shes probably going to fail me. I wasn’t nasty, but women are spiteful, heh.

My other two classes are online lecture, which is fine, because the subjects are easy. Nutrition and biology 110. There’s not much to say about nutrition. I read the book and then take a quiz and write some papers. Biology 110 is a hybrid class meaning my lecture is online but I have to go to campus for my lab. Which is also fine because biology 110 is basically biology 105, but more in depth. So its no big deal.

So about a week ago I realized that even if I do get accepted to the vet tech program, Its going to take me two more years to get this associates degree. I’m sorry, but I will not do four years of college for an associates degree. Why four years you ask? Because I’ve been waiting to be accepted for 3 semesters already, and they only offer the vet classes in the spring semester, so in the fall i’d be doing nothing productive, taking all nonsense classes. Therefor, with 4 semesters of vet classes left, it will really take me 8, since the classes are only offered one semester a year instead of two semesters a year.

So what am I going to do you ask? Instead of taking 4 years to get an associates I will take four years to get a bachelors, which is the normal amount of time it takes to get a bachelors. If I take one more semester at my current community college, I will be able to transfer to Kutztown University in fall 2011 to work on a B.S in cellular or microbiology. Either of these degrees will still somehow get me working where I want to. Optimally, I would like to be a in a lab researching companion animal disease or something along those lines. If I cant get a job in the animal field, as long as I’m in a lab somewhere I’d be rather content.

Now here comes my dilemma. After doing these four years of college for a B.S in some sort of biology, it wouldn’t be that much longer to just go for my V.M.D. I mean, if I made it that far… why would I stop? Obviously I am on a roll. I think this is how it is going to go: I graduate Kutztown with my B.S in some biology field, and I will attempt to get into Pennvet. If I don’t make it, I’ll drop it, because I know its really hard to get in. That way, I cant say I never tried and cant regret not trying.

Time will tell. Its too soon to start obsessing.

If there’s anything I hate more than being bored, that being bored while anxiously awaiting a certain point in time. I’m talking about summer break. How boring it is. How boring it is…

I’m a big dork. That’s all I can say. I love college. I love going to the campus and sitting in classes and taking notes. I love feeling like I’m actually attempting to improve my future life. I love my major and what I’ll be doing for the rest of my being. I’m going to work harder this semester than I ever have strived for anything in my life, ever. I need to get accepted to the Vet program. This is my last chance. I do, however, have a back-up plan. But, its not my ultimate choice.

I have a passion for seeing animals happy and healthy and in a loving environment, the canine species, especially. That’s why I want to be a vet tech. I want to care for and teach people about their chosen companion animal, and how important it is to love them unconditionally, and provide them with whatever they may need to be most happy.

What I’m trying to say is, pets are not disposable. And it seems that no matter how hard you try to teach people this concept, it just doesn’t click. Ignorant, cold hearted individuals that get rid of pets because they are an “inconvenience”.  What disturbs me most are owners who give away pets in their old age. You loved them while they were young, but now that they need medication or have problems controlling their bladders, you’re going to go ahead and throw them away when they need you most. How do you think they feel? Abandoned, unwanted and unloved. Confused. Scared. All the same exact emotions you, a person, would feel if you were left alone, given away. Just because they are of a different species, does not mean they don’t feel. You picked them. They had no say in the matter. I’m pretty sure, if they had the choice, and knew you were going to abandon them in their old age, they would have picked a family who would love them until their little doggie hearts beat no more.

How sick and twisted does one have to be to do this to puppies and feel no remorse! And how sick and twisted the legal system is to let these boy go unpunished?! And the boys father, What is he doing about it? Nothing, because he bred these dogs to fight. They mean nothing to him. Hurting animals is proven to be a “prerequisite,” per se, to serial killers and other more intense criminal actions. They did not mention the boys age but, excuse me, if he is so overwhelmed with hormones, why not introduce yourself to Lefty and Righty? Or go to a sex shop! They sell things to satisfy men!! Leave the poor puppies alone. What he did to these dogs is just downright wrong, and required surgery to fix what he did. Charity is dead because of this boys disgusting act of animal abuse.
